Criteria for the purchase of unskinned game

  • The carcass must be properly cleaned. There must be no changes in the colour of the meat.
  • Carcasses that are not free from excrements will be rejected.
  • If the game is not clean (e.g. if the carcass was not properly opened or eviscerated) there will be a deduction of 10 % off the purchase price.
  • For legal reasons game that was killed due to a cause other than hunting cannot be accepted anymore.
  • Completely or partly skinned game as well as game delivered without expensive parts like saddle or filet or wild boars killed during the mating season cannot be accepted.
  • The saddle is classified quality I if it is undamaged up to the 10th rib counted from the filet.
  • Wild boar meat will undergo analysis for trichinella at our premises. In accordance with the EU Council Directive (EG) no. 2075/2005 of 5 December 2005, wild boars must be delivered with head as samples have to be taken from the jaw or diaphragmatic muscle AND from the muscle of the lower front leg.
  • The hunter or authorised person has to make sure that animals with a radioactive contamination exceeding 600 becquerel are classified unfit for human consumption and are not delivered.
  • Game from small farms cannot be purchased. A certificate issued by the appointed veterinary authority has to be presented if the game is delivered from a big farm (the game is treated like free living game).
  •  The internal temperature of game must be between -1°C to +4°C upon delivery. If the animal is delivered within 12 hours after the shooting the temperature may be higher.
  • The temperature of the cold store for unskinned game must be between
    -1°C to max. +1°C  and the air circulation must be controlled in order to chill the game immediately upon delivery.
  • If the game is rendered unfit for human consumption by the official veterinary the supplier will receive a confirmation.
